The new tenant of the Sophon building (the hip Cambodian fusion restaurant which closed earlier this year due to money issues) is Herkimer coffee, expanding their roastery to increase production capacity. TBD on additional seating (potentially outside). Was really curious what would replace Sophon so wanted to share!
