I grew up on enchiladas like this. I had no clue most people eat rolled and baked enchiladas. My enchiladas have a red base with beef. We fry a corn shell soft, dip in sauce, layer sauce and beef, shredded lettuce, onion, and cheese. Add more sauce and meat, add two fried eggs, then top with another sauce dipped corn shell. I am looking for the best enchilada like this in Seattle. I don’t care if it’s red or green sauce, but they need to have spice and they need to have eggs. Ten years ago this Christmas I lost my best friend of 25 years to a massive brain stem stroke. Her oldest called me Christmas day and I immediately flew to DFW to be with her and her kids. She was so young…only 44. It devastated me and I broke down for a good five years. I watched her go for15 days with her children and then I had to get back on a plane and try to return to life as before, but nothing was ever the same…including me. It took me 8 years to “participate” in Christmas again because I suddenly hated her favorite holiday. Two years ago I tried a 2′ tabletop tree, but it still felt wrong. For my own personal reasons I spiral starting in October…the 15th to be exact so last year, the tree went up October 15th and I found myself decorating it with Dia De Los Muertos decorations and things that reminded me of her and I had myself the first Dia De Los Muertos/Christmas. This bastardized version of two holidays is MY season and it ends on the day she took her last breath and crossed over to the place we go when we die, January 8th. This year I am fully committed to this season and celebrating the gift of Mel(issa) that I was blessed with for half my life at the time she died. Mel LOVED my enchildas so this year, the tree/alter will go up and on October 15th I will start by going out to dinner to have stacked enchiladas and end on January 8th doing the same.
