I’ve shopped in person and called around some Ethiopian grocers and markets, looking for ivory teff flour in 5-10 pound quantities. None had anything less than 25 lbs (sourced from Maskal Teff), albeit at a pretty great price per pound. However, I can’t use or store that much flour as I’d like having fresh as possible. The prices online are flabbergasting, and I’d like to support the small local businesses.
I’ve been trying to make injera as a practical skill and don’t want to drive 30-40 min I need or want injera. Brown teff flour has been tricky to us, so I thought I’d try the ivory. I read that practically no one makes their own injera, so I’m guessing the bulk buyers are commercial injera bakers? I’d also like to start using teff in other dishes.
Alternatively, I saw that Afir is a relatively new injera bakery. Can anyone recommend other injera bakers or makers in the South Seattle or Renton area? Thanks!
