Looking for a good grilled cheese sandwich.

I miss the days of walking to the Cheese Wizards food truck when I worked downtown. Since then I’ve been searching for a proper grilled cheese that isn’t too much but also isn’t just some bread slapped with some mediocre cheese. I work on the Eastside now, so I’m a bit limited, but truth be told if there’s a decent grilled cheese somewhere, and it doesn’t deliver, I’d be willing to drive for it.

Preferably something vegetarian, but I’ll go for some with meat depending on what’s in it.
