I have seen just a handful of explicitly vegan or vegetarian restaurants here, compared to say Portland where it is very easy to find options. Many restaurants offer vegan/veg options, but these items tend to feel more like an afterthought with less focus on unique appeal to the customer, (ie sub veggie patty for an up charge). I feel like the “plant based renaissance” was pretty apparent over the last ten years, but seems to be gaining less attention lately which could be a cause for fewer restaurants taking the risk to open with this platform. I would still think with similar politics and resident values/morals to Portlanders we would see a food scene that reflects these similarities as well.
I just want bomb and innovative vegan food that appeals to everyone, whether vegan or not :/
